Monday, May 10, 2010. 2 cans chicken broth. 1 can Rotel, partially drained. 1 can chicken, drained. 1 can black beans, drained. 1 can whole kernel sweet corn, drained. Tortilla chips, optional. Shredded cheese, optional. Combine all ingredients in pot. Let simmer until heated through. Crumble chips in bottom of bowl, top with soup, top with cheese. Thursday, August 20, 2009. 1 lb shrimp, shelled and deveined. 1/2 to 1 stick butter or margarine. Garlic Salt, to taste. Worcestershire sauce, to taste. Cajun or All-Purpose seasoning, to taste. Easy, fast, and cheap! That's my kind of dinner! I put 1 lb of shrimp, but honestly I'm not sure. You want enough to serve 4. Add shrimp to pan. Add Worcestershire and seasonings. Monday, November 2, 2009. Jen's Easy Veggie Soup. 1 - 15 lbs ground hamburger. 2 cans tomato sauce. 1 can crushed (or diced) tomatoes. 1 bag frozen mixed veggies (carrots, corn, green beans). Salt and pepper, to taste. Garlic, to taste. Fry hamburger meat and drain. Add tomato sauce and tomatoes. Add chili powder, garlic, salt and pepper - I usually sprinkle the whole top of the mixture with chili powder, then stir, and add the other seasonings. Heat through. Why use hamburger meat? In honor of Cinco de Mayo, I am pleased to share my Easy Peasy Gaucamole Dip. 2 large, ripe avocados (peeled and cut into chunks or mashed). 1 small - med tomato, diced. 1 small onion, chopped. 1 lemon or lime, halved. Salt and pepper to taste. Just combine everything in a bowl, except lemon or lime. Juice citrus fruit over bowl, stir, chill if desired, and enjoy. Jen's Even Easier Guacamole. 2-3 large, ripe avocados (peeled and mashed). Optional: 1 small onion, chopped.
