The Cyprus carobs, the variety of 'Tylliria' 'Countourca 'and 'Coumpota' are unique in the whole world due to the high percentage of sugar in the pods. Food Value Per 100 g of Carob Flour. Moisture 11.2 g. Protein 4.5 g. Carbohydrates* 80.7 g. Fiber 7.7 g. Sugar content may be as high as 72%. The pods contain up to 1.5% tannins which interfere with the body's utilization of protein.

Whole hand selected carobs are exported for human consumption in various health food shops in Europe and in America as well as North Africa where they have been eaten raw since Pharaoh times. Medium and meal are then sold locally as an important animal feed ingredient during the animals (sheep, goats) lactation period.
