Just had an entire day of my favorite rain (spring rain with quiet thunder) light, steady, fragrant. The Cardinal "couple" that frequents our feeder in front stayed out pecking in the soft earth for worms. They didn't mind that their scarlet backs were dripped on from overhead, it seemed romantic watching them, and I wondered if they were preparing for a baby or two- to come.

The prep is slightly more involved than say, following a Jiffy box which takes 40 seconds.because I've timed it. These suckers have. 1 1/2 cups yellow corn meal. 1 cup unbleached white flour. Scant 1/4 cup sugar. 1/2 tsp. salt. 1/4 tsp. baking soda. 1 cup unsweetened almond milk. 1/4 cup vegetable oil.

So this cake is your basic 1-2-3-4 recipe, my grandmother swore by it as best from-scratch cake, best for birthdays, best tasting, etc., so it is my go-to. It's also easy to change the flavor and I like easy- especially if I have to make a frosted cake from scratch once a week. 1 cup softened unsalted butter. 3 cups self-rising flour. 1 generous tsp almond extract. 1 cup almond milk- unsweetened.

I'm a big fan of wraps, but get bored with the usual suspects. On a whim and at a particularly hungry moment I decided to not give in to my desire for a loaded cheeseburger- no - I made a wrap with flavorful ingredients AND added lots of texture so I was sure to be satiated. And I made it big. Large pinch of paprika.

Nearly 70 degrees in March is special here in Nebraska, folks! Avocado and Cucumber Salad with Feta and Herbs. 1 large hot-house cucumber, peeled and chopped. 1 large Hass avocado, chopped. 1/4 cup crumbled Feta cheese. 1 Tbsp. lemon juice. 1 handful chopped cilantro. 1/2 tsp. dried dill. 1/2 tsp. dried parsley. Freshly ground black pepper.

No, I don't mean corn-nuts! Preheat oven to 450 degrees. Drain 1 can of Garbonzo beans well, then lay them on a paper towel to dry for 15 minutes. I added salt and pepper and after 1 minute of turning it with a spoon, that went on top of the eggs. Now a spoonful of hot salsa. This breakfast has made the best list, in my book. Low-effort, happiness inducing, equals GOOD. A few slices of toasted baguette. 1 fried egg (fry it how you like it).
