Apicius Sauce for Roast Duck. INGREDIENTS for The Sauce. A Small anount each of :-. 2 tablespoons sweet red wine vinigar. 2 tablespoons anchovy essence. In a mortar pound the herbs. Add vinigar,grapefruit juice,berries and anchovy essence, wine and olive oil. Mix thoroughly then cook altogether until the berries are tender. A Roman Recipe( Leeks Rolled in Cabbage Leaves). THIS RECIPE IS SUITABLE FOR THE MODERN DAY MICROWAVE. LEEKS ROLLED IN CABBAGE LEAVES. Some cabbage leaves preferably curly cabbage. Enough water and olive oil mixed together to cover the leeks. Cut the leeks into rings and roll about 5-6 rings in each cabbage leaf. Place in a microwavable dish close together packing them tightly. My Welsh Leek Sauce Recipe. 2 tablespoons olive oil. 2 tablesppons thyme honey. L level teaspoon pepper. L teaspoon sage finely ground. You will need a good blender to be able to:-. Mince the currants and then the leeks seperately. When this is done add the herbs and mix well. Add the vinegar and olive oil and mix until a smoother. Consistency is achieved then add the honey.,.
