It is more feared than even…dare I say it…sugar (gasps! What exactly is gluten? Gluten is the part of the grain that makes bread elastic. It makes pizza dough stretchy and cakes tender and chewy. It also helps bread to rise and to keep its form. What is gluten sensitivity? Fatty stools because fat digestion is impaired. Is Gluten only in foods?
