This recipe (from my friend Jessica) comes together so fast, is made in one pot (or crock pot), requires little chopping, and brings together delicious flavors. A real winner I keep making over and over since she first shared it with me. If you have some ginger, garlic, and a sweet potato on hand, you can probably make this with stuff you have in your pantry. 1 sweet potato, cubed (I used 2). 1 T minced ginger.

Plus my friend Biz's legendary pink potato salad with beets. This one has golden beets, which don't dye the rest of the salad pink. It's a perfect mix of salty, crunchy, tangy, and colorful. You pretty much follow the recipe for the warm lentil potato salad. But then add in some roasted beets, cut into small dice. Pickles (or cornichons) chopped small.
