This cake is an adaptation of the vanilla cupcake recipe from "Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz and a key lime cream cheese frosting from Bon Appetit magazine. The addition of coconut milk to the cake recipe gives it a wonderful dense texture. Surprisingly, the cake does not have a coconut taste. 1 cup coconut milk. 1 teaspoon apple cider vinegar. 1 1/4 cups flour. 1/2 teaspoon baking soda.

It’s especially relevant now that I’m back in the Midwest, where there are four seasons.
