I just wing it. 4 links andouille sausage or other spicy sausage, cut in 1 inch pieces. 2 cups cubed butternut squash [see directions below for easy softening and slicing]. 1 16 oz bag fresh baby carrots. 1 cup red potatoes cubed. Frac12; sweet yellow onion cubed. Handful fresh stemmed rosemary or tablespoon dried. 2-3 Tbs olive oil. Frac14; cup dry red wine like pinot noir. Frac14; cup maple syrup.
