Saturday, June 30, 2012. Romania 2012 - First week. Wednesday, June 27, we took a day trip to Resita, my hometown, to visit my grandma. She was so happy to see us. Friday we went to Hateg, Hunedoara to have lunch with our cousins and uncle and took a day trip to the Corvin Castle. The kids got to do some archery in a medieval castle and play hide and seek. I made this Spinach Chicken Lasagna rolls last week and they were a hit! It was super easy to make and both DH and I love that it's a "clean" version of lasagna. It's not messy at all. Though we did eat it with extra spaghetti sauce. We like them saucy! Lol =) I forgot to take a picture of the ones we made so I included a picture from the website I got the recipe from. Source: the girl who ate everything. 1 (10 ounce) package frozen chopped spinach, thawed and completely drained. Salt and fresh pepper.

Sunday, December 21, 2014. I have to say that I have never been into eggnog, although it is a holiday-time standard. I thought they would be a good treat to bring to an ugly sweater party. This recipe was inspired by a recipe on Annie's Eats. Of note, I used cinnamon because I didn't have any nutmeg. From review of the recipes out there eggnog and nutmeg often go hand and hand. Feel free to substitute nutmeg for cinnamon or get crazy and do half and half! Printable version of recipe. 1/4 tsp baking soda.
