                                        Sunday, July 11, 2010. I get obsessed with things that I can't explain. One current obsession is smoked flavor, as in, smoked sea salt, smoked paprika, liquid smoke, smoked chipotles. Besides the chilies, I don't yet know how to use these flavors well, but am experimenting a lot. The other thing that's come out of the blue is wanting to infuse vodka.                                         Sunday, October 25, 2009. Pawpaws are North America's largest edible indigenous fruit. Why had I never had one before? The best explanation seems to be that they don't "work" for business: they don't keep long, they don't ship well, they don't ripen off the tree, they don't preserve well. Food that can't be marketed on a large scale doesn't "make sense" to grow in our consumer society. The genius of Northeastern fruits, who, it turns out, lives and works in New Paltz.
