This is so good. 4 medium heads of broccoli. 2-3 TBS olive oil. 3 garlic cloves, minced roughly. 10 cups water 5 Not-Chick'n bouillon cubes. 1 onion, diced. 4 small potatoes, peeled and chunked. 1 package of silken tofu (Mori-Nu is the brand I get, it comes in a box). Wednesday, May 28, 2014. Veggie Bake Casserole with Cashew Cauliflower sauce (Vegan). I modified this from a vegetarian times recipe. It was so good, I'm planning to use the sauce as a vegan scalloped potatoes dish for Thanksgiving and Christmas. Keeper! 1 head cauliflower (steamed 15 minutes until tender). 1 large onion, diced. 3 cloves garlic, minced. 2 cups veggie broth. 1/2 - 1 cup raw unsalted cashews, soaked in water for several hours. 1 TB fresh chopped thyme. 2 tsp fresh squeezed lemon juice.

From Vegetarian Times website. 1 red bell pepper, chopped. 6 green onions, sliced. 3 cups veggie broth. 3 cloves garlic, minced. 1 tap crumbled saffron threads. 1 cup short-grain white rice. 3 cups broccoli florets. 1 cup frozen baby peas. 1 cup halved grape or cherry tomatoes. 12 pitted green olives, 12 pitted black olives. 1 lemon, wedges. 1/4 cup chopped parsley. Saute red pepper and green onions. Stir in broth, garlic and saffron. Bring to boil and simmer 10 min.

I have succumb to the pumpkin craze! 3 cloves garlic, minced. 1 tsp olive oil. 1 can pumpkin puree. 1 jar TJ's roasted red peppers, chopped. 3 TBS TJ's pumpkin butter. 1/4 tsp poultry seasoning. 1/2 cup walnuts, chopped fine or food processed. Sunday, May 5, 2013. These are a modified version of Chef Chloe's Yoga Cookies. I call them breakfast cookies because they have so much yummy stuff in them I figure they are good enough for breakfast. :). 1 cup all purpose flour. 1/2 cup whole wheat pastry flour. 1 1/2 cups rolled oats. 1/4 cup canola oil (or coconut oil). 1/2 cup agave or maple syrup. 1/2 cup shredded coconut. 1/2 cups chopped walnuts. 1/2 cups mini choc chips. 3/4 package Trader Joe's Lentils. Mix together to a paste in Cuisinart.

Wednesday, November 5, 2014. Drain two blocks of firm tofu. Wrap in paper towels and place under a plate with something heavy on top to press the liquid out. Prepare marinade. 1 cup soy sauce. 2 TBS grated fresh ginger. 2 tsps toasted sesame oil. 1 clove garlic, minced. After tofu is pressed (30 minutes), slice and place in glass baking dish and cover with marinade. (Reserve 1/4 cup marinade for dipping sauce).
