Monday, January 2, 2012. It's a new year and we're trying a few new things. My goal into make more healthy dinners at home and try to have 2-3 meals a week with no meat. This recipe is one my Mom shared with us a few months ago that we love. It's super easy, we almost always have the ingredients, and it doesn't have meat. 1 cup chopped carrots. 1 (16oz) can kidney beans. 1/2 cup chopped onions. 1 clove minced garlic. 1 (16oz) can diced tomatoes. 1/2 cup chopped parsley. 2 Tbsp. vinegar. 1/4 cup olive oil.

I did find another recipe that suggested adding a bit of vanilla and I thought about trying that instead, although, after drinking this one I might just leave it as is. 1/4 cup old-fashioned rolled oats. 1/2 cup plain low-fat yogurt. 1 banana, cut into thirds. 1/2 cup fat-free milk. 1/4 teaspoon ground cinnamon. Wednesday, June 16, 2010. Since we're off to Scandinavia I thought it only appropriate to talk about what we might expect to eat there. This was the first recipe I encountered when searching for Iceland. Other than that it looks like Iceland is known for it's wide variety of fish (caught in the unpolluted North Atlantic waters), and fresh vegetables. Celandic Pancakes (or Crepes) with Whipped Cream. In Norway, fish will be in abundance as well but I also found this link to. To try while we're there.

She wanted a gymnastics theme and amazingly, there isn't much (translation: zero) party stuff available.
