Baking-n-Caking

Since I was little, I have been baking - from helping my mother to teaching my own children how to bake through the years & given the amount of cakes baked in that time, guess I like 'caking', too. I now find myself with the daunting task of a wedding cake for my eldest daughter who is getting married in June 2012 – add to that the challenge of her recently being diagnosed with Coeliacs. So a bit of baking, a bit of caking and make it gluten-free - this should be fun!

It is a pure indulgent meal laced with the best of the Mediterranean flavours and is best served over brown rice or herbed quinoa, maybe even potato wedges. And it's great as an easy weeknight dish. 4split organic free-range chicken breasts [skinless are fine]. Sea salt and gluten-free seasoning, to taste. 390g tinned tomatoes with juice. 180ml of your favourite pasta sauce.
