Monday, 19 April 2010. Gluten Free, Vegan cupcakes. This was an experiment of mine. One of my friends is vegan, her brother is on a gluten free, dairy free diet . 4 Tablespoons dairy free spread. 2 cups Granulated Sugar. 2 teaspoons Baking Soda. 3 cups rice flour. 2 teaspoons vanilla extract. 189; teaspoons Ground Cloves. Teaspoon lemon juice/lemon extract. Water to form a thick paste. Cream together spread and sugar. Add all other cake ingredients in the order listed. Bake for 35-40 minutes.

Friday, 26 March 2010. 240g dark chocolate (70% cocoa or higher). 135g golden caster sugar. Preheat oven to 150C/Gas mark 2. Put the chocolate and butter in a bowl over a pan of boiling water (making sure the bowl does not touch the water). Stir until melted then set aside to cool. Put the eggs and sugar in a mixing bowl and whisk until pale and creamy. Stir in the flour and finally fold in the melted chocolate mixture.
