In the summertime, I make a lot of hummus. It is easy to make and only has a few ingredients. I love to use it as a dip with raw vegetables. I serve it with snow peas, sugar peas, broccoli, cauliflower, radishes, celery, and carrots. I recommend trying it with a variety of vegetables. There is a lot of eggplant in this dish. I like to use the round, purple ones. I've seen them called "sicilian" at the grocery store. If you have a garden or frequent the summer farmer's markets, you will be able to find most of the ingredients for this dish very cheap. 2 hr prep time 1 hr bake time. Serves 6 to 8. 4 Tbl olive oil. 3 eggplants, cut into cubes. 3 zucchini or yellow squash, cut into cubes. 1/2 tsp black pepper. 8 springs of fresh thyme. 12 fresh basil leaves. 3 cloves of garlic, minced.

I like greens with flavor, and I don't like to coat my greens with salad dressing. I like to drizzle a teaspoon or two over the top. The balsamic recipe makes about 2 tablespoons, but you can easily double it if you need more. 30 min. prep time 50 min. bake time cool time for the sweet potatoes. 2 large or 3 medium sweet potatoes. 1 Tbl olive oil. 1/4 tsp sea salt. 1/2 cup frozen, shelled, edamame. 6 cups fresh spinach. 1/4 cup dried cranberries. 2 Tbl pumpkin seeds. 1 1/2 Tbl olive oil.
