http://cookingwiththepack.blogspot.com/2010_01_01_archive.html
Friday, January 29, 2010. Tuscan-style chicken and white bean soup. Mmmm, is there anything better than a hot bowl of soup on a cold day? I love a good, hearty Italian soup, and when you use rotisserie chicken from the grocery store and canned beans, it is an easy weeknight meal that is sure to please! 2 Tbsp. extra virgin olive oil. 2 medium carrots, chopped. 2 stalks celery, chopped. 1 medium onion, chopped. 3-4 cloves minced garlic. 1 teaspoon Italian Seasoning. 1 can small-dice tomatoes. The pre-seas...

Cooking with the Parker Pack: June 2009
http://cookingwiththepack.blogspot.com/2009_06_01_archive.html
Thursday, June 25, 2009. I know, sounds crazy, but grilling the romaine lettuce before chopping for this salad changes the taste entirely and lends the salad a smoky, earthy flavor that is out-of-this-world good. Try it! 2 romaine hearts, washed and halved lengthwise. Prepared creamy-style Caesar dressing (from the refrigerated produce aisle- I like Lighthouse brand, personally). Freshly grated Parmesan cheese. 2 cups prepared garlic croutons. Tuesday, June 23, 2009. Barefoot Contessa: Back to Basics.

The Parker Pack: Lent
http://theparkerpack.blogspot.com/2014/03/lent.html
Wednesday, March 5, 2014. Lent is not something I grew up observing. Coming from a Protestant family that embodies a patchwork quilt of denominations, we celebrated the life and death and resurrection of Jesus, but we never observed the 40 days of self-denial that is Lent. As an adult, I have occasionally observed Lent, usually giving up something trivial because, well, it was expected. I can't keep having days like this every day! And then I realize that in my attempts to chronicle my turn from fleshly ...

Cooking with the Parker Pack: February 2010
http://cookingwiththepack.blogspot.com/2010_02_01_archive.html
Tuesday, February 9, 2010. Italian Sausage Peppers and Onions, lightened up. On a cold winter day, this is an awesome dish to make for your family. It is quick, easy, makes enough for a leftover lunch the next day, and even my kiddos love it. Italian comfort food, but lightened up significantly from the original using lean turkey. Want to lighten it up even more? Here's a link to a video tutorial, in case you need a visual aid. 1 Tbsp. extra-virgin olive oil. 1 red bell pepper, sliced. 1 tsp kosher salt.

Cooking with the Parker Pack: Money-saving Tip #1: Chicken Fajitas
http://cookingwiththepack.blogspot.com/2010/01/money-saving-tip-1-chicken-fajitas.html
Friday, January 29, 2010. Money-saving Tip #1: Chicken Fajitas. You know those pre-seasoned chicken breasts or thighs for fajitas that you can buy at the store? Just open the pouch, throw 'em on the grill or in a pan, and you can have fajitas in about 20 minutes. I love these things- that is, until I broke down the price of them. OUCH! So, I figured out a much cheaper, and healthier, alternative. Subscribe to: Post Comments (Atom). As most of you know, I love to cook and am always getting requests for my...

Salt and fresh-cracked pepper, to taste. Subscribe to: Post Comments (Atom). Just ask, I'll be happy to post it! Throw in a d...
