TBoB – Taking the Bollocks Out of Baking. Date and Sultana Soya Bread. Otherwise know as “Off Yr Ocar”. Why? I thought yoga people might well go for soya milk as opposed to dairy, and honey rather than sugar. Oats go well with soya milk, and together with a dash rye add a bit of earthy rusticity. The only consistent factor was they all began “One liter sourdough” – no hydration specified. Basically I had to rework them all. All the bakers I tell this to make the same joke: pineapple, ham, cheese – why not put it on a round, flat dough? Google leads us to King’s Haiwaiian, a bakery set up in Hilo in the 50s and to the usual bunch of crappy recipes imitating the original. Had some for breakfast, half an hour out of the oven …. I got the bus all on my own to Bangor, had a pint of Old Rosie in Wetherspoons and did a bit of shopping. I was delerious with excitement! But it’s about seven weeks since I did a proper bake and I think I have to make some changes to my routine if I’m going to continue small scale production. We shall see.
