Chlodnik (Salt Cucumber Soup). 3 pints of sour cream. 189; pint of pickled cucumber juice or pickled beet juice. 1 ½ cups of cooked veal cut in dice. 1/3 lb. of fresh beets. 1/3 lb. of beet tops. 1 teaspoon of chives. 6 hard boiled eggs. 2 fresh and 1 salt cucumber. Cook the beets and, when quite tender, remove from the water and rub through a sieve. Add the chopped beet tops, and cover with either the cucumber or the beet juice. 1 teaspoon of chives.

Sunday, May 24, 2009. Gaufres A'la Flamande (Flemish Waffles). 1 lb of flour. 1/2 pint of cream. 4 tablespoons of butter. 1/2 glass of brandy. About 1/2 oz. of yeast. A pinch ozs. salt. A pinch of sugar. Put 1/4 lb. of flour in a bowl and mix with the yeast, dissolve in a little warm water. Work well and set to rise. Then work in the rest of the flour, with the salt and sugar, the eggs, slightly beaten, and the cream, which should have been boiled and to which the butter is added. Posted by Simple Recipes.
