Baking and making…its what I do best! Its been a while since I last took part in the weekly bakeoff. The last thing that I made was the Mississippi Mud Pie…put me off a bit as it was horrid! I have also made the Orange Maple cake which looked amazing but I never had chance to take a photo or taste it! Those that did eat it said it was lovely…ah well maybe another time. This weeks bake was Apricot Swiss Cakes (ok I know That doesn’t look like apricot – that’s because it isn’t! A new week, a new bake….

I decided to make myself and the bearded man christmas stockings to fill for each other. Then to decide on what to pop on the front! Well, so many options…initials…no I wanted something a bit more personal…I know! Beardy likes bikes, I shall put a picture of a bike on his. How to do this? Baking and making…its what I do best! 135g unsalted room temperature butter. 1 whole egg 1 egg yolk. 2 eggs – separated. 2 lemons juice and rind. TO MAKE THE PIE…. PASTRY…Firstly make the pastry as this requires at least 30 minutes in the fridge to chill. Cream together the butter and sugar till soft and smooth. Slowly add the egg and yolk mixing all the time. Mix in the flour till it forms a dough, wrap in clingfilm and pop in the fridge to chill. Cook at 150c for 25 minutes till lightly golden. Enter y...

Baking and making…its what I do best! Malt loaf is a sticky, chewy, sweet bread, best served with proper salted butter spread thickly and accompanied by a steaming cup of tea. Malt extract is a sticky, treacle like gloop, originally a by-product from the brewing industry. This is a traditional style recipe using sultanas, but feel free to experiment with your dried fruit (my next one will more than likely contain cranberries). Baking and making…its what I do best! Things certainly have changed since I last wrote on here. Teacher training started and finished in the space of a few months (definitely not for me), moved accommodation three times, worked at various places both good and bad and been through a whole load of personal issues.
