More Than You Can Chew. January 29, 2016. January 29, 2016. After a long day I was feeling pretty lazy and didn’t want to spend a bunch of time in the kitchen. I decided that I was going to cook up some quinoa penne, marinara and top it with eggplant. I have been dying to use eggplant as a healthy alternative and I think this here is about as healthy as comfort food gets! The idea is easy! After everything has been cooked then layer your dish: penne, sauce and eggplant on top! 1 box quinoa penne pasta*.

Cooking is my hobby, but I needed a little challenge…. September 13, 2013. It has already been a year since I started my food blog. And what a fun year it has been! My second gourmet grilled cheese was inspired by some ingredients I already had on hand. I had a huge bag of basil from my mother in law and several tomatoes from my community supported agriculture share.
