Bite-sized thoughts: Loving this week

http://www.bitesizedthoughts.com/2015/05/loving-this-week.html

Sunday, May 10, 2015. The trees are green again, the sun has been shining, and there are flowers everywhere. A Whole Foods picnic in Kensington Gardens, to be precise. May it be the first of many this spring/summer! 3 Local park facilities. I've set myself the goal of having sufficient arm muscle to traverse this set of parallel bars from end to end (at the moment I can do about 4 arm steps, so I have a way to go.). 5 Good customer service. 6 Discounted Nakd bars. What are you loving this week? That soun...

Bite-sized thoughts: Three ingredient, no crust, chilled vanilla cheesecake {vegan + raw}

http://www.bitesizedthoughts.com/2015/05/three-ingredient-no-crust-chilled.html

Tuesday, May 5, 2015. Three ingredient, no crust, chilled vanilla cheesecake {vegan raw}. Sothat cheesecake mentioned in my last post? It did work out. Rather well, in fact. I still find raw desserts amazing, and this one is a particularly good example because it uses just three simple ingredients. I have used with previous raw cheesecakes. With that said, I did like this crust-free version as it allowed the creamy vanilla flavour to shine through without distraction. As for the ingredients? This is a ch...

Bite-sized thoughts: Moroccan tagine

http://www.bitesizedthoughts.com/2014/09/moroccan-tagine.html

Monday, September 15, 2014. For this third week of Vegan MoFo, I am shifting to main meal options. Several of this week's posts focus on cuisines that I have long admired but barely tried. Today is an example: we are travelling to Morocco, a country that is high on my places to visit even aside from its edible appeal. Moroccan cuisine tends to include aromatic spices and dried fruit, both things that I enjoy in savoury (and sweet! There are certainly many meat-containing tagine recipes, but vegetables st...

The gypsies of the High Country

http://blog.katiebolt.com/gypsies-of-the-high-country

The gypsies of the High Country. The month of May means it's TWALK. Time - basically the best event of the year right? I mean, what's not to love about dressing up and running round the hillsides for 24 hours? Because we are a disorganised bunch, L just entered a group of us and gave us a team name, The Gypsies. We thought it seemed like a pretty good theme although I'm not sure the boys were convinced until they realised that all gypsies need, a caravan. Having a bit of a caravan construction party!

Horrible runs and magic runs

http://blog.katiebolt.com/horrible-runs-and-magic-runs

Horrible runs and magic runs. Before we embark on the final long weekend before we get plunged into the depths of winter (sigh) I better get cracking and get myself up to date! It's been exhausting over the last couple of months. It seems crazy/weird but the winter period always seems to be the main event season. At least it keeps you moving through the dark months! Like I said on that post. I suspect I haven't learnt my lesson though. I've raced The Dual. Still, I'd made good time but the final climb ov...

When it rains it pours

http://blog.katiebolt.com/when-it-rains-it-pours

When it rains it pours. Anzac weekend (yay for now having Mondayised public holidays! We took the Friday off to head down to Te Anau again, this time so I could "race" the Routeburn Classic. On the Saturday. We got there in the afternoon and basked in the sunshine.from within our cabin where it was warm and there was a bed to do our basking on. Unfortunately though, the sunny weather was not to hold. The finishline, heros style. There was even a crash mat for us all to 'fly' onto. Good times! I was prett...

The DUAL Half Marathon

http://blog.katiebolt.com/the_dual_half_marathon

The DUAL Half Marathon. You have 4 options with The DUAL. You can do the 50km or 30km mountain bike races, the marathon or the half marathon and, obviously, I chose to do the half marathon. Again. You see, I did this race last year as well (although it had a slightly different start last time). Just for an overview, here's the course profile with a total of 553 metres climb. Yep, pretty much as soon as you start you're heading straight up. There's no easing you into it! Once nearly reaching the bottom I ...

Bite Sized Twinkie | Hard Twinkies are better than soft ones!

Hard Twinkies are better than soft ones! Time to start over… again. Yes, it’s true – I’ve gained 2lbs after a short vacation over the weekend to Portland with my man. It’s okay though – I’m just happy that I didn’t gain everything back. AND – I have a wedding to go to. A wedding where I will meet my boyfriends WHOLE ENTIRE FAMILY! I’d definitely like to look nice for that! My goal would be to beat my last 1/2 marathon time @ 2 hours and 35 minutes. April 29th = 133lbs. Gained 2lbs from previous month!
