I saw it on the menu of a restaurant in Austin's hometown and thought it sounded genius. It's pretty simple really; it's just eggplant wrapped around ricotta with tomato sauce on top or, to put it differently, a lasagna roll made with eggplant instead of pasta. What's there not to love? Makes 4 to 5 servings.
