Follow along as I aim to be debt free by 40. 26 January, 2014. Today was dreich. A good Scots word for a rather wretched Scottish day. Outdoors, it was wet, windy, dark and thoroughly unappealing. Normally, miss F and I would have gone shopping today – the stock of fresh stuff in the house is getting perilously low – but as she put it: “I want to be warm and dry more than I want to get fresh air.”. Feeds 4-6 with rice or chunks of bread). 3 Tbsp oil for frying. 1 clove garlic, finely chopped. A useful ti...

Follow along as I aim to be debt free by 40. Carrot Cake Muffins (makes 12). 18 February, 2014. Recipe doubles easily, and the icing quantity is enough for 24! These are incredibly moist, and very filling too, and a great use for those tired carrots in the bottom of your crisper drawer when you have absolutely had enough of soup. 175 g brown sugar (muscovado, soft brown, dark soft brown or whatever). 120 ml vegetable oil. 2 tsp mixed spice. 50-100 g sultanas (or raisins). 1/2 an orange worth of zest.

Lentil Lasagne | DrLJN

Follow along as I aim to be debt free by 40. 13 March, 2014. This is the filling I use for my lentil lasagne. It also works very well as a filling for suet pasties a la Mortgage Free in Three. Though the white sauce requirements are very different. This will make enough for 6-8, so I tend to use 2/3 for lasagne and the rest for pasties. 100g mushrooms OR 1/2 an aubergine (you can use both if you like, but you do need one or the other for texture). 1 tin tomatoes or 4 fresh whole tomatoes. This is what pu...

Experimental cooking: fishcakes at 31p each | DrLJN
https://drljn.wordpress.com/2013/09/03/experimental-cooking-fishcakes-at-31p-each
Follow along as I aim to be debt free by 40. Experimental cooking: fishcakes at 31p each. 3 September, 2013. We managed to cook rather too much potato at the weekend, leaving me with 200g of mash in the fridge. I’d already made soup, so that wasn’t my preferred option (though mashed potato is an excellent way of thickening up a soup or stew). Next time, I’ll add another heel’s worth of crumbs, as the cakes were a bit on the soft-and-sloppy side, but served with the last of the sweet chilli sa...4 slices ...

Follow along as I aim to be debt free by 40. Menu Plan Monday: A new approach. 18 August, 2013. I’ve started a new job with lots of new stuff to learn, and am finding it hard to settle down to planning every week. So, for a while at least, we’re going to be on a predictable round of meals. If we get bored, well, I’ll change things around a little, but this is the basic outline. Non-branded shreddies / chocolate weetabix for small. Tea / decaf tea / bush tea / coffee (big). Pressure cooker rice pudding.

Follow along as I aim to be debt free by 40. All posts by drljn. 30 September, 2016. This is a work in progress. A very good friend has a vegan cafe and restaurant, and last time I went she fed me the most amazing cabbage curry. I haven’t managed to replicate the unctuousness of the original yet, but this is still very tasty. If you ever visit Durban, South Africa, do stop in at “It’s all good”. Whatever is on will be tasty and healthy – a far too rare combination. 1 medium cabbage (800g approx). Add the...

Follow along as I aim to be debt free by 40. Stretch your mince – spaghetti bolognese with lentils 89p p/p. 7 October, 2013. I may have mentioned that I have a very particular child. She knows what she likes, and isn’t afraid to let you know. Food can be a problem…. So, when I discovered that she enjoyed Bolognese, it immediately went onto the menu plan. So, my bolognese isn’t exactly authentic, but it does taste good. Pressure Cooker Bolognese with lentils (to feed 6 adults @89p per person). Turn down t...
