Creamy Green Bean Almond Soup. Leek and Wild Rice Soup. Creamy Green Bean Almond Soup. 2 TBS vegetable oil. 3 scallions, coarsely chopped. 2 (145 oz.) can of vegetable broth. 1 (15 0z.) canned French cut green beans, drained and rinsed. 1 C whole almonds, ground to a powder. 1 C half and half. In a blender or food processor, puree green beans and broth. Return to pan and stir in ground almonds, salt, pepper, nutmeg, and half and half. Simmer over low heat for about 10 minutes and serve. 1 tsp white pepper.
