THE SKINNY ON ALL THINGS HEALTHY. August 21, 2014. Prep Time: 7 minutes Cook. 1 pound fresh ginger root. Juice of 2 limes. Maple syrup or honey to taste. Directions: 1. Thinly peel the fresh ginger, grate and mix with water in a large saucepan. 2 Bring to a boil and simmer for 4 minutes. Cover the pan and turn off the heat; leave for 24 hours. 3 Strain the liquid through a fine mesh sieve. 4 Add the lime juice and maple syrup or honey. Stir until dissolved. Serve chilled. Avocado Dip Prep Time: 3 minutes Makes 1 cup. 1 large peeled and pitted avocado. 2/3 cup plain yogurt, goat yogurt, coconut yogurt, or almond yogurt. A squirt of lemon or lime juice. Dash or two of cayenne pepper sea salt and black pepper. Mash avocado with a fork until very smooth. Add yogurt, tomato, cayenne.Blend until smooth. This may be done in a food processor, in a blender, or with a fork. Add sea salt and fresh black pepper to taste.
