The best aspect of this dish is that it is incredibly easy and quick to make, never mind the fact that it's cheap and, most importantly, incredibly flavorful if done right. Let's get to it. 2 large onions (diced). 2 large tomatoes (diced). 1 large bell pepper (diced) * any "color" will do. 3 garlic cloves (finely minced). 15 cups of rice. 8 cups of water * or beef broth. 2 pounds of beef (diced) * any cut will do, just no fat or nerve tissue! Location: Santa Cruz, Bolivia.

Meat - 1/2 kg. Corn - 2 ears, cut off cob and very finely ground. Assorted fresh vegetables - 1/2 kg. Vegetable oil - 2 tbs. Broth(beef, chicken, or vegetable) - 2 cups. Potatoes - 6 nos cut into small cubes. Onion - 1 no. Eggs - 5 nos. Pepper - 5 nos. Fry the meat in oil with the onion, corn, peppers and salt . When the onion becomes soft, add the potatoes, vegetables and broth. Cook in low flame until the vegetables are cooked. Serve with a fried egg on top of each serving. Links to this post.
