ㆍ현재 등록된 상품은 6개. 새콤달콤하면서도 짜지않고 부드러운 명이나물장아찌입니다. 들녘에서 하나씩 채취한 고들빼기를 절였다가 김치식으로 만든 장아찌로서 젓갈, 마늘, 고춧가루, 생강, 양파즙으로 양념하였습니다.(한정품). 가을에 직접 농사지은 토종 무우를 잘 썰어서 태양에 말립니다. (멸치액젓, 양파즙, 마늘, 과일즙)을 양념하여 판매합니다. 6월에 지리산청매실을 구입하여 매실을 6쪽 내어 (설탕, 매실)을 20일 숙성시킨 후 고추장에 잘 버무려 1년 이상 저온에 숙성시켜 판매합니다. 노지깻잎을 소금에 절인다음 깨끗이 세척 후 (찹쌀죽에 멸치액젓, 양파즙, 마늘, 과일즙)을 양념하여 판매합니다. (겨울, 봄)에는 삭힌 깻잎을 판매합니다. 생더덕을 고추장에 버물려서 본연의 더덕향을 느낄수있습니다.

봉화지역에서 재배되는 햇콩을 가마솥에 6시간 삶아서 양력 11월 1월에 메주를 빚어 말려서 황토온돌방위에 짚을 깔아 메주를 띄웁니다. 봉화산골 지방의 햇콩을 전통방식 그대로 3년 동안 숙성시킵니다. 봉화지역에서 재배되는 콩을 장작불 무쇠솥에 삶아 황토방 싸리바구니에 짚을깔고 4일동안 발효시킵니다. 실같은 진을 보존하기 위해 돌절구에서 찧어 청국장을 만들어 황토온돌방에서 자연 건조시킵니다. 우리나라에서 가장 춥고 일교차가 큰 봉화 지역에서 재배된 고추로 만든 고추장은 엿질금에 달인 물을 식혀 직접 발효시킨 메주가루와 보리쌀을 띄우고, 찹쌀가루 천일염으로 간을 맞추어 2년이상 숙성시킵니다. 전라도 신안에서 생산되는 천일염으로 만드는 봉화간장은 간수를 뺀 후 사용하며 가마솥 장불에 6시간 이상 끓여서 백년 이상된 전통옹기 속에서 3년 이상 숙성시킵니다. 자연 숙성되는 동안 불순물이 제거 되어 깊은 맛과 청정함이 우러납니다.
