Turkey Cacciatore, serves 4. 1 TBS olive oil. 2 onions, sliced into thin strips. 3 red peppers, sliced into thin strips. 1 clove garlic, minced. 1 TBS chopped rosemary. 1 TBS chopped basil. 1 TBS chopped thyme. 1 TBS chopped oregano. 1 lb turkey breast cut into medallions. 28 oz can chopped whole tomatoes, no salt added. 1 cup rice, cooked according to directions. To serve: Divide among 4 plates and serve over rice.
