Ma’s raisin bread. On July 27, 2011 · Leave a Comment. Ingredients for a large batch. 4 1/2 cups white flour. 6 cups wheat flour. 2 1/4 cups raisins. Measuring devices for cups and spoons. Mix all dry goods. Add the buttermilk and ricotta mix for 10 minutes, Kitchen Aid on 4 or 5. Knead by hand for 2 more minutes. Ferment in slightly oiled container. Let sit for 1 hour, knead again. Let sit for another hour. Shape the roles or bread. Cut dough, carefully shape. Proof for at least 40 minutes.

Agave nectar or maple syrup, didn’t try that yet, though. Walnut oil or any other oil you like. Peanut butter or almond butter. Measuring devices, cups and spoons. Mix dry ingredients in the bowl. 2 cups rolled oats. 1/2 cup wheat germ. 1 cup pumpkin seeds. 1 cup sunflower seeds. 1 cup sesame seeds. Mix the wet ingredients. 1/4 cup brown sugar.

Water spring water, I use filtered water. Olive oil, virgin oil -first press- for better taste. Milk, I use 2% organic milk. Yeast dry yeast will do. Salt sea salt, I use the grainy kosher salt. Ice cubes cold water will do. Stand Mixer or patience and strength. Measuring devices, cups and spoons. 2 tbsp dry yeast.
