Asymp; Leave a comment. 自從好幾年前開始做麵包,在不同的地方上過課, 中間因為公幹去了三潘市, 於此期間到三潘市烘焙學院(San Francisco Baking Institute)上了製作法國棍子麵包(baguette)的工作坊, 自那時開始我便不斷的在歐式麵包(artisan bread)/ 真麵包 的世界鑽研。 諗中文中學的我, 常看的麵包書都是英語的, 有不少更是幾百頁, 字排得密麻麻, 圖片很少的硬皮書。 為了麵包, 我開始認識食物科學(food science)。 當然, 我這個科學白痴到現在也只是曉得一些很皮毛的食物科學原理, 畢竟我一直覺得中學時化學跟物理科考試合格是幸運已而。 後來我也有上過蛋糕跟西式酥皮(cake and pastry)的課程, 但是麵包始終是唯一使我醉心研究的範疇。 製作麵包看似簡單, 其實當中所有步驟, 每一動作和氣溫濕度都會影響麵包的質素。 要到專業學校進修的諗頭一直在我心中, 今年我終於立下決心, 報讀英國Nottingham的三星期專业麵包製作班。 In Bread Theory 麵包理論.
