It is an easy and quick meal that gets a lot of veggies in front of my family. Not to mention I have voracious rice eaters so this keeps them happy. Sweet and Sour Chicken. 6 T apple cider vinegar or red wine vinegar. 6 T orange juice. 1 lb boneless, skinless chicken, diced. 2 T olive oil. 1 red onion, diced. 2 c pineapple chunks. 1 c carrots, sliced (I used carrot chips).
