I’m not a big fan of sweet breakfasts, so topping my oatmeal with brown sugar or maple syrup just doesn’t work for me. This is a hearty dish that will satisfy you well past lunch time! 1/2 c steel-cut oatmeal, cooked. 2 eggs, poached easy. 2 T shredded cheese. 1 T diced jalapeno. 1/4 c diced tomato. I like to make a big batch so I can freeze some for easy dinners later. Feel free to cut this in half if you don’t want so much. 2# ground beef (16% fat is my favorite). 2-3 cups yellow onion, chopped. 2 green bell peppers, seeded and chopped. 6-8 cloves of garlic, minced. 1/3 c chili powder. 1/2 t cayenne pepper (to taste; I love spicy food). 28oz can chopped tomatoes.

Favorite recipes, books and crafts. Laquo; Brenda’s Chili. Maddie’s Favorite Caramel. Green Chile Corn Bread. November 5, 2012 by brendaspeirs. Preheat your oven to 350F. Grease a cast iron skillet or 8″ square baking pan. 1 c Yellow Corn Meal. 1 T baking powder. 1/3 c vegetable oil. 1 large egg, lightly beaten. 1 small can green chiles. Combine the dry ingredients in a medium bowl and whisk together to blend. Bake for 20-25 minutes and serve warm. You can also add some fresh corn to this.

Tuesday, July 26, 2011. Kyler is so close to walking! He thinks he's pretty neat because he can take four or five steps. Too cute. Can't believe it's almost August already! Summer just got here and now it's almost over! Casey will be going to Kindergarten this year. He is excited, I'm not sure what to think! He was my baby for a long time before Kyler came around.
