Lentil and Seitan Wat with Roasted Brazil Nuts. Ethiopian stew, generally served with a flatbread). 1 cup brazil nuts, roasted and skinned. 2 carrots peeled and roll cut. 2 ribs celery, cut on the bias. 1/2 potato medium dice, with or without skins. 1/2 cup lentil flour. 1/4 cup beri beri spices. 1add brazil nuts to a 350 oven and roast until golden brown. 2add xvo to a pan and brown seitan. 3add beri beri spices to pan with seitan and cook for 2 minutes or until aromatic set aside. 1 lb seitan, chopped.

Simple Sweet Brown Rice. 1 C sweet brown rice, rinsed and drained. 1/4 C whey or 1T miso paste. 1/2 t sea salt (optional). 1 place rice in a pot with 3 cups water and bring to a boil,. Add 1/4 t sea salt and reduce heat to a simmer. 2 cover and cook rice for 20-40 minutes or until the liquid absorbs. Back in the day there was always fresh tofu hanging around. One day one of the genius foodies here at the time decided to add some value to that tofu and tofu salad was born. Simply a combination of fresh Bridge Tofu, chopped carrots celery and onions, ground sesame seed paste (tahini), shoyu, umeboshi vinegar, and sea salt. Tahini: a ground sesame seed paste. Sesame seeds are an excellent source of calcium and iron. Carrot: a vegetable popular with rabbits.
