Used to be that I would try to figure out what went wrong and try to correct it next time. Only to end up creating solid chunks of sweetened fruit. Now, I've decided it just happens sometimes and use the unset jelly/jam as pancake or waffle syrup. It's cheaper than pure maple and better for us than store bought imitation maple syrups.
