Thrifting away again in bargainville. Friday, May 1, 2015. Cook brown whole grain rice (however you want, boil or microwave). Cook black beans (can or bag). Use canned chicken or cooked chicken breasts and shred. Mix salsa of your choice, shredded chicken breasts and Greek yogurt (as a sour cream substitute). Layer all the ingredients:. Spread rice in baking dish. Layer black beans on top of rice. Layer chicken/salsa/Greek yogurt mix on top of black beans. Sprinkle top with choice of shredded cheese.
