Tuesday, September 6, 2011. September 1, 2011 6:30pm. Chicken thighs were seasoned with Market Day season salt and grilled over high heat along with some oiled onions, bell peppers, and squash. These tasty grilled items were served with grilled flour tortillas. Black refried beans; homemade giant bowl of salsa with tomatoes from the garden; bag of shredded Mexican style cheese mix; Tabasco sauce. Big bottle of wine that was finished and more was desired. Thats a Mild Enchalada.

Friday, October 23, 2009. October 22, 2009 6:30pm. Carolyn cooked up some whole chicken breasts and shredded them and attempted to make enchiladas. The attempt failed though. The corn tortillas were crumbly and crumbled when she tried to roll them up. So we ended up with an enchilada lasagna. Which was very tasty and all but Noah enjoyed. Noah had a whole chicken breast which he ate about half of. Black beans; Velveeta and tomatoes; homemade pickled jalapeños; chips; sour cream; salsa verde from a jar.
