I used to make quite similar Banchan dish like this one using tofu. Although soy bean hummus is made with pretty much same components with tofu-soy bean and water basically-, it is fresher and, of course tastes better. The nuttiness of soy bean hummus elevates the flavor and the texture of the vegetable without disturbing the essence of it.

Mostly about Korean cuisine. Thursday, November 11, 2010. In an unexpected location, amidst old hardware market place in Seoul, Uraeok has been serving the best Bulgogi for several decades. They grill Bulgogi on a special brass pan, which is designed to collect all the drippings from grilling Bulgogi. They mix the dripping juice with their secret broth and later, after eating Bulgogi, cook North Korean style buckwheat noodles in the broth to finish the meal. 1 Cup of soy sauce. 1 and 1/4 Cups of sugar.

I had an unforgettable meal at Yong-Chul-Hwei-Jib (용출횟집 : could be translated "Enter the dragon sashimi house"? It is located near Yong-Du-Ahm (용두암: Dragon-Head-Rock) which is 10 minutes away from Jeju international airport by car. I have been to Jeju Island numerous times. Fresh sea conch, sea urchin, octopus.

Mostly about Korean cuisine. Sunday, March 27, 2011. Tofu salad with radish and sprouts. Tofu making is my recent passion. Some people might say it is not worthy to spend so much time just to eat a block of tofu but I found it very pleasant, even therapeutic. Freshly made warm tofu is delicate and fragile. I just don't want to disturb its purity. Tofu is subtly sweet,. Smokiness of bonito flakes add a new demention to it. 1 block salad quality tofu. A handful micro greens or any kinds of sprouts you like.

Mostly about Korean cuisine. Wednesday, July 6, 2011. Cold soy bean noodle (콩국수). Making the base for soy bean noodles is quite similar to tofu. The one I tried was very nutty. I guess they added peanuts and pine nuts when making the soup base. All you need to eat this is good pinch of sea salt, fresh cucumber and Kimchi. It is served very cold.
