This recipe is derived from the Southwestern Rice and Veggie Cakes recipe from the Cooking Light Fresh Food Fast cookbook as part of my 2017 A Year of Cooking Light Challenge. If you have a family member who is not a big fan of corn, be careful which type of rice you select! 2 (85oz) pouches Southwestern styled microwaveable cooked rice medley.

While I’m not usually a fan of liquor, this is a popular holiday drink in our house. 1 cup ginger ale. 1/3 cup Sour Apple Pucker. 1/6 cup (black) cherry bourbon whiskey.
