They recently built a stunning contemporary near Duke University. I wanted to move in. Curried Chickpeas with Tomatoes and Coconut. 3 - 4 tablespoons vegetable oil. 3 15 oz. cans chickpeas, drained and rinsed. 1 28 oz. can peeled, diced tomatoes or 6 medium fresh tomatoes, diced. 1 very large white onion, diced. 6 garlic cloves, minced. 2 teaspoons ground coriander.
