Canadian bacon, back bacon and peameal bacon – whatever you might call it… all differ from the bacon sold in the US because it is made with a pork loin as opposed to pork bellies. (British back bacon is made from a cut of pork that includes both the loin. Belly… clever Brits! Since I have a lifetime supply of curing salt, why not make some? Shake bag well to evenly coat meat and then place in refrigerator.

My DIY Food Journal. 1 Month Chick Update. May 16, 2015. Last night I stopped by Costco (Victorville, CA) for a few things and noticed that they actually had pork bellies for sale for $1.99 a pound! So I did the only thing that I could have done… I bought 22 lbs! I know it seems like a lot, but I’ll have to do some sharing…. As I walked down to the water before the ceremony I noticed that there are millions of what looks to be baby lobster (they may be some type of oceanic crab, but they look like lobster! I think that there is no way I can move on without doing American style Bacon! When fall arrives, a lot of people start dreaming of Pumpkin Spice lattes and such, but not me… I start thinking of Bacon! Good Bacon. Smoky, meaty, sweet bacon – not a slab of bland fat with a ribbon or two of meat running through it! Purchase a Pork Belly. Trim up to manageable pieces.
