When one has the happy burden of having too many lovely friends one needs to be creative in how appreciation and thanks is given at the festive season (ie buying that many presents is a bit silly! So last Christmas I forwent the perils of present giving and invited my nearest and dearest to a gingerbread making party. I find lemon cupcakes always go down a treat and aren't too 'weird' for picky children. I have a delightfully moist recipe I use from the Primrose Bakery's cupcake book. It's much like the idea of adding buttermilk really, only I'm more likely to have plain yogurt in my fridge. 125g softened vegetable shortening (check it's trans fat free!

The cakes I have the most success with use large proportions of dutched cocoa and oil instead of butter (hint if you're in Australia, Woolworth's homebrand is good dutched cocoa, much better than Cadburys! Ms Cupcake's favourite chocolaty moist cake. 250g yoghurt (plain, greek or buttermilk). 2 eggs (large free range ones please! 1 table spoon vanilla. Ms Cupcake's sour chocolate icing. 200g dark (55-70%) chocolate, melted. 3 tablespoons dutched cocoa.
