Little Miss Piggy: Thai Chicken
http://littlemisspiggy-meg.blogspot.com/2011/02/thai-chicken.html
Meg's (now gluten free) adventures in cooking, living, schooling and maybe some training too. Saturday, February 5, 2011. My nephew Caiden has been a GREAT couch buddy while I've been injured. We were hanging out, him in his dino outfit and exersaucer and me with my boot and crutches (I know, he's cuter), and I browsed through my sister's crock pot recipe book. The crock pot is awesome for minimizing standing time! 2 - 25 lbs chicken breasts. 1 cup hot salsa (I used Newman's Own). Meg making some pie.

Little Miss Piggy: Fiesta Casserole
http://littlemisspiggy-meg.blogspot.com/2011/02/fiesta-casserole.html
Meg's (now gluten free) adventures in cooking, living, schooling and maybe some training too. Thursday, February 17, 2011. This is a really easy weeknight dinner. It also makes great leftovers. I served it with Mexican rice. For high school girl friends Emily. And Julie. And of course, Doug eat his fair share when he got home later that night. The recipe calls for ground beef, but I swap it out with turkey. 1 pound lean ground turkey. 1 large onion, diced. 1 green bell pepper, diced. Meg making some pie.

Little Miss Piggy: December 2010

Meg's (now gluten free) adventures in cooking, living, schooling and maybe some training too. Monday, December 27, 2010. I already love my new waffle maker. I also love these waffles. Coconut flour doesn't taste like coconut, it's just a light and sweet gluten free flour alternative. They're also very high in protein and low in carbs. Just magic! 15 teaspoons oil (I used veggie). 15 teaspoons of vanilla. 3/8 teaspoon baking soda. 3 tablespoons coconut flour. Hooray for a post Christmas blizzard! Heat the...

Little Miss Piggy: March 2011
http://littlemisspiggy-meg.blogspot.com/2011_03_01_archive.html
Meg's (now gluten free) adventures in cooking, living, schooling and maybe some training too. Thursday, March 3, 2011. Pineapple Upside Down Cake. Dad's birthday was celebrated at brunch time, so it seemed a little weird to make a traditional birthday cake. Combined with the slew of birthday and Valentines related treats, I was looking to make a bit of a lighter cake! Fruity desserts are healthier, right? 1 medium fresh pineapple, peeled and diced in small pieces. 1 cup firmly packed light brown sugar.

Meg's (now gluten free) adventures in cooking, living, schooling and maybe some training too. Sunday, October 25, 2009. Look what I can make! I took my second class with Helen's Kitchen. It was called French Pastry and it was as awesome as it sounded! Here are some pictures! This is called a roulade - it was chocolate sheet cake that we layered with a coffee buttercream, rolled and then covered with chocolate ganache. Oh man it was delicious. Next up - a Paris-Brest:. So I liked it even more! Turns out, ...

Little Miss Piggy: November 2009
http://littlemisspiggy-meg.blogspot.com/2009_11_01_archive.html
Meg's (now gluten free) adventures in cooking, living, schooling and maybe some training too. Wednesday, November 25, 2009. When approached by the Brookline Tab of WickedLocal.com for Thanksgiving leftover ideas, I wanted to figure out my proportions for turkey burgers. For this sort of thing I have a tendency to not use measurements, so I had to figure it out. Make as much as you'd like, but I used the 1 cup standard for ratio purposes. Y0u can also use chicken. 1 cup crumbled roasted turkey. 1/2 cup pa...

Little Miss Piggy: Mom's Beef Stew
http://littlemisspiggy-meg.blogspot.com/2011/03/moms-beef-stew.html
Meg's (now gluten free) adventures in cooking, living, schooling and maybe some training too. Thursday, March 3, 2011. My mom made some awesome beef stew for my birthday dinner, and I had to make some! 1 large white onion, chopped. 2 -3 pounds stewing beef, lean. 2 large carrots, peeled and chopped. Mushrooms, optional - I left them out. 2 lbs potatoes - I found a bag of very small yellow potatoes from Roche Brothers I used. I think they were mini yukon golds. 1 can tomato paste. 4 cups of GF beef broth.
