Fresh bread crumbs – 2 cups. Milk – ½ litre. Sugar – ½ cup. Grated lemon rind – 1tsp. Butter – 2 table spoons. Eggs – 2. Mixed fruit jam – 2 tablespoons. Egg whites – 4. Castor sugar – ½ cup. Beat the eggs. Add milk, sugar and butter and blend well. Pour this mixture over bread crumbs. Add the lemon rind and mix gently. Transfer to a buttered baking dish. Bake in a pre-heated oven at 200 degrees C for 45 minutes or until set. Take out from oven and spread jam on top. Serve either hot or cold.

Vanilla Icecream – ½ litre pack. Gelatine – 10gms. Lemon – 2. Sugar (granules)– 3tsp. Fresh Cream – 100gms. Powdered sugar – 2tbs. Lemon rind (grated) – ½ tsp. Watermelon puree – 1 cup. Cornflour – 3tsp. Sugar – 8tsp. Lemon – ½. Mix the ingredients for the crust and press well into a 8” diameter pie dish. Put to set in the freezer.

Milk – 3 cups. Vanilla essence – 1tsp. Castor sugar – 50 gm. Nutmeg powder – ¼ tsp. Remove crusts from bread and then apply butter generously on one side of the bread. (Use all the butter measured.). Cut each slice into 4 pieces. On a greased rectangular dish, arrange one layer of bread slices with the buttered side down. Sprinkle raisins and half the sugar on top. Arrange the rest of the bread with buttered side up. Mix nutmeg powder with the rest of the sugar and sprinkle on top of the bread slices.
