Monday, August 11, 2014. What's for dinner this week? Chicken and Rice bowls. Fish (OJ) Chicken (me and Penny) w/ Salad and Roasted Asparagus. Roast w/ mashed potatoes and green beans. Tonight we had Fajita Quesadillas. I used strips of onion, green and red bell pepper, and baby portabella mushrooms. I sauteed them over medium high heat with a little bit of canola oil, then seasoned with some taco seasoning. Then I used my Griddler (love that thing! 1 down, 4 more to go . . . Saturday, July 27, 2013. Asian Grilled Chicken and Crockpot Baked Potatoes. This brilliant idea is courtesy of Skip To My Lou. How have I never thought of this before? You just clean your potatoes, wrap them in foil, and put them in the crockpot on low for 8 hours. They are ready when you come home from work / school. Brilliant! They were perfectly done. Saturday, August 10, 2013. Spinach and Pancetta Stuffed Shells. I was super ambitious yesterday and did some cooking! It's cured pork, similar to bacon but not smoked. If you can't find it or don't want to you could always use finely chopped ham or bacon. But you totally should try it. I sort of winged it on the recipe so the measurements aren't really precise. "Till it looks right" is the rule of thumb for this. Spinach and Pancetta Stuffed Shells. 1 box Jumbo Shells. 1 pkg (2 cups) Italian cheese blend.

Sunday, August 18, 2013. I found an Olive Garden copy cat recipe for this soup on Pinterest. I read it a couple times, but when I went to make it today the website wasn't there anymore. Not sure what changed from yesterday, but I decided to wing it anyway. So, here's what I did:. 1/2 lb sweet Italian sausage. 5-6 sliced bacon, diced (I didn't have any. I'm sure it would've been good with it, but it was good without it too). 1/2 large onion, diced. 2 crushed garlic cloves. 6 c Chicken stock, low sodium.

Saturday, July 27, 2013. Ham and Potato Casserole. Even though Connie invented these ;) I got this recipe from Six Sisters Stuff. In my family we always called these "Funeral Potatoes" but it never had ham and my mom always puts crumbled potato chips on top (very yummy). I've made this twice now and LOVE it! Penny wanted to use a picture of HER plate). Slow Cooker Ham and Potato Casserole. 1 (30 oz) package frozen hash brown potatoes, cubed or shredded. I used frozen shredded). 1/4 cup butter, melted.
