https://oldtiogafarm.wordpress.com/2013/10/04/marcella-hazan-1924-2013
The journal of old tioga farm. Posted by La Cascina. Asymp; 3 Comments. Like so many other cooks in America, my life was changed by Marcella Hazan, who died Sunday at the ripe age of 89. She had the good fortune to pass away peacefully at home at the side of Victor, her beloved husband of more than 50 years. Though she had not grown up cooking or even very interested in food, once Marcella found herself married to a food-obsessed husband, she learned to cook the food of her homeland. As she wrote,. Above...

After consulting numerous recipes, I just couldn’t get it to taste just right, like the best version in Rome from Arcangelo Dandini. Which he uses to dress his heavenly potato gnocchi. But last week I was eating at Armando. In Rome, and they were publicizing their new cookbook. Larr; Previous post. Next post →. Leave a Reply Cancel reply. Making ti...

The journal of old tioga farm. Posted by La Cascina. Asymp; Leave a comment. Margherita di Bufala at Emma Pizzeria. About 10 years ago I learned to make thin-crusted Tuscan pizza from Caleb Barber of Pane e Salute in Woodstock, VT, who had learned it in turn from a baker in Tuscany where he had apprenticed. So I was really excited when I first came to Rome five years ago to learn that Rome had a thin-crusted pizza tradition too. Wood-fired oven at Emma. This type of pizza’s crust is so thin that it...

The journal of old tioga farm. Posted by La Cascina. Asymp; 6 Comments. My introduction to gnocchi came through Marcella Hazan’s excellent book. The Essentials of Classic Italian Cooking. But then I found myself in Rome under the tutelage of guide Katie Parla. After complaining about some mediocre gnocchi I’d eaten the night before, and after hearing Katie’s explanation that many places serve low quality gnocchi made from dehydrated potato flakes (yuck! Katie took me to L’Arcangelo. But she too called fo...

The journal of old tioga farm. Posted by La Cascina. Asymp; 1 Comment. And even though $300 per month for health insurance would seem cheap to many people today, it was more than we could afford. We had one income ($30,000 per year) and our budget was really tight. We went into debt and knew that we had to trim our expenses. Health insurance seemed like an area we could cut because we were healthy. Of course, this is a reality hidden from us and made invisible since few of us interact much with the poor.
