I had some fresh pork loin in the fridge that I had used for pork chops the night before. There was about 1.5 lbs. left, so I decided to make something different, since I had lots of cabbage and Italian chard in the fridge. So this is what I made. 15 lbs (or more) of pork. 1 onion chopped lengthwise. 3 cloves garlic in slivers (or crush or mince them if you are in a hurry).

Healthy foods can be healthy and dellicious. 6 Chicken Breasts, skinned (or an assortment of chicken parts). 1 lb of homemade sauerkraut (or do yourself a favor and find a German deli that makes their own). If all you have is grocery store canned sauerkraut, go for it. 1 onion, sliced thin and longwise. 4 slices of thick-sliced nitrate-free Bacon (Whole Foods and New Seasons have some really good bacon). Salt and Pepper to taste. Serve with your favorite salad or green veggie.

Healthy foods can be healthy and dellicious. NO, not road kill. These pancakes are made with ground flaxseed and no other grains, gluten free. We serve with pureed fruit instead of syrup. Leftovers can be refrigerated and later used as bread substitute. Handy for sandwiches in the knapsack or lunch box. 1/2 cup flaxseed ground in blender or coffee grinder. 1/2 cup coconut flower. 2 tsp baking powder. 2 cups unsweetened coconut milk beverage (I use So Delicious brand). 1 tsp vanilla extract.

Healthy foods can be healthy and dellicious. This recipe is a take-off on traditional Irish Champ. I use cauliflower instead of potatoes, and the flavor is wonderful. 1 head cauliflower, cut into florets. 3-4 cloves garlic (if you like more garlic, go for it), finely chopped. 1 leek, with tops removed, washed and sliced. I generally slice the leeks lengthwise, rinse out any sand, then slice them crosswise in small pieces (I love leeks, so I sometimes use 2 leeks). A good dollop of coconut milk.

We found some delicious sausage on sale at Freddies, so we decided today would be a great day for a sausage breakfast. You know, comfort food on a rainy day. Also, it’s Sunday, and we have veggies left over from last week. So, being a fridge raid day, we made an awesome meal. 1 lb of good quality sausage (what we bought on sale was Isernio’s Chicken Breakfast Sausage). 1/2 onion, chopped. 1 apple, chopped. 2-3 cloves garlic, minced. 1 jalapeno, finely chopped. 1 tsp Penzeys Spice BBQ 3000 spice mix.
