Christmas conjures up images of roast goose, figgy pudding, and sugar plums…stateside we usually will celebrate over a chestnut-hued turkey or glazed ham, however this holiday season I opted for something simple, satisfying, and comforting…pho ga (Vietnamese chicken noodle soup). I LOVE the fact in Los Angeles you can easily find a bowl of this comfort food for just 5 buckaroos! I know, insane! 3 T fish sauce.

What is Ceci cooking? Healthy, affordable, and sustainable cooking. My friends always claim that what I term “easy” turns out to be not so easy…well, this time it really is. Lunch or dinner in 15 minutes flat. I swear. Inspired by Ashley over at Not Without Salt. Here is my riff on her. I used capellini pasta because it cooks in 3 minutes. Just boil the water, throw in the pasta, let in boil for a minute, turn off burner, and allow the pasta to sit in the hot water for 2 minutes. Voila! How easy was that?

Even though we are 8 days into the new year already I have yet to comfortably write 2012…but I am convinced that this year will be an auspicious year as we welcome the Year of the Dragon in a month or so.
