Fluffy Buttermilk Pancakes with Coconut Syrup. 1 3/4 c. flour. 4 Tbsp. sugar. 1 tsp baking powder. Add and mix well:. 3 Tbsp. butter, melted. 2 c buttermilk ( you can add more if it seems too thick). 3 eggs yolks- set whites aside. Beat egg whites until stiff, then very gently fold into batter. (Do NOT overstir! You want to still be able to see the egg white foam in the batter. I normally only stir a few times to distribute the egg whites.). Cook on hot griddle and enjoy! 1 tsp baking soda.
