Phat Vegan: Mexican-Style Corn
http://vegancomfortcooking.blogspot.com/2012/06/mexican-style-corn.html
Comfort Cooking Animal-free Style. Saturday, June 30, 2012. One my favorite snacks from traveling in Mexico (or from just living in Houston) is the dressed up corn in a bowl or on the cob. The vendor will smear on mayo, cheese, chili powder, salt and lime and folks gobble it up. As a vegan, I had to opt for no mayo and no cheese. So I took things into my own hands and made it at home. http://vegancomfortcooking.blogspot.com/2011_05_01_archive.html
Comfort Cooking Animal-free Style. Sunday, May 22, 2011. You can use any fruit you want for this recipe from How It All Vegan. I used blueberries and half a can of cranberry sauce. It's straightforward and doesn't take that much time. What an excellent way to start a Sunday morning. 3 tsp baking powder. Egg replacer equal to 2 eggs (either the powerded stuff, one banana or about half cup applesauce). 1 1/2 cups fresh or frozen fruit. Labels: how it all vegan. Saturday, May 21, 2011. 1/2 onion, chopped.

Phat Vegan: November 2011
http://vegancomfortcooking.blogspot.com/2011_11_01_archive.html
Comfort Cooking Animal-free Style. Tuesday, November 22, 2011. Every homemade veggie turkey I've tried has been a letdown. While some folks may want to avoid processed foods like this or save money (the Tofurky roast runs about 10-15 bucks) this is a tasty and hearty addition to Thanksgiving. Will you family make fun of you based on its silly name? But will you love every bite? Sunday, November 20, 2011. Thanksgiving Ideas: Rice Pilaf. 1 teaspoon avocado or olive oil. 1 onion, diced. 1 carrot, diced.

Phat Vegan: Vegan Sushi
http://vegancomfortcooking.blogspot.com/2012/06/vegan-sushi.html
Comfort Cooking Animal-free Style. Saturday, June 16, 2012. I was inspired by my friend Roxy getting a fancy roll at a sushi restaurant. Veggie options are usually boring. Cucumber roll, for example. Meanwhile, my friends are getting the Shaggy Dog and the Rock and Roll and all this other more delicious looking stuff. My version is not going to please a sushi traditionalist, but will likely please your palette. Place a sheet of nori. Now place your veggies in a line on one side of the rice. They shou...
