Flour, baking powder, salt, caster sugar and chocolate chips get mixed together in one bowl. Oil, milk, egg and mashed banana get mixed in another bowl. Fold together until just combined and spoon into greased muffin tins. Bake for about 15 minutes, remove from oven, and enjoy! Banana and Chocolate Muffins. 2 teaspoons baking powder.

Tuesday, February 12, 2008. Southwest salad with black beans and corn. The new recipe I tried out a couple of weeks ago - Southwest salad with black beans and corn. Was a great success. The only changes I made was to substitute lemon juice for the lime juice, and tomato for the red bell pepper. Adding the toasted tortilla strips was a great idea- a chewy contrast to the other textures, We served it with salsa and sour cream. The photo is of the leftovers I had for lunch the next day. Recipes I want to try.

Thursday, January 24, 2008. Bacon and Spinach/Silverbeet Risotto. Another new recipe . and another success. This Bacon and Spinach risotto was easy to make and it had a lovely flavour. I've never put a pinch of nutmeg in a risotto before (or tomato for that matter) and I think it really did something nice for the dish. The other change I made was completely unintentional. I pulled out my container of arborio rice, and only had 3/4 cup instead of the 2 cups required! No, didn't think so. 1 red onion, diced.
